GUIdebook

GUIdebook is an excellent site that showcases the different GUIs of the major OSes and their elements.  It has screenshots of Mac OS, BeOS, OS/2, Solaris, Amiga and Windows from their earliest versions to the latest.  It even showcases different icons over time and OS.

If you’re interested in GUIs and the thinking and design behind them, then this is certainly worth checking out.
